Abstract
This research investigates the relationship between educational level and meat consumption, motivated by the significant health and environmental impacts associated with high meat consumption. Studies have linked the intake of processed and red meat to higher risks of cancer and digestive disorders (Boada, Henríquez-Hernández & Luzardo, 2016), and the production of meat contributes substantially to climate change and resource depletion (de Carvalho, Sant’ana de Castro Selem, Miranda & Marchioni, 2016). Given these negative effects, it is important to understand the socio-cultural factors influencing dietary choices, particularly meat consumption. To address this need, a quantitative study was conducted with a representative sample of 1,038 Dutch adults. Using regression analysis, the relationship between higher educational attainment and reduced meat consumption was examined, along with the potential mediation of this relationship by knowledge about sustainability and health. The results confirmed the main hypothesis: individuals with higher education levels consume less meat. This association was partly explained by their greater knowledge of sustainability and health issues. These findings highlight the importance of education and information accessibility in promoting sustainable dietary habits. Additionally, policy interventions such as subsidies for plant-based foods and taxes on meat products have been shown to effectively encourage sustainable diets (Broeks et al., 2020). Therefore, increasing awareness and education about health and sustainability through policy measures could effectively reduce meat consumption, contributing to both public health and environmental goals.
